RECIPES

Friends have been asking for recipes for our fresh produce.  During these conversations we have shared some of our favorites, and learned  some tasty new dishes.  Please share recipes as a blog comment or email them to us at ovg@digis.net and I will add them here.

Pam’s Salad – Choose the bowl size depending on how many people you are serving!

Fill a bowl half way with Mesclun mixed greens, Green Buttercrunch head lettuce and/or Red Buttercrunch lettuce.

Chop and add any fresh vegetable(s) and /or strawberries or apple to fill another third of bowl.

Add some olive oil and toss to coat all items lightly.

Add balsamic vinegar and toss to mix.

Crumble some feta cheese on top (fat-free works just as well).

Grind fresh pepper on top.

Add walnut pieces (unsalted and unroasted).

Throw in a few dried/sweetened cranberries.

YUM!

Easy Borsht -from Amanda Ballenger
Boil beet in water until soft, you may add carrot and potato if so desired
Puree when cooled until smooth, if you wish for some bites of beet remove a few pieces and set a side
Dice a cold cucumber, sweet onion or scallion, add to puree
Chop dill or any other yummy herbs that appeal to you
Good salt and ground pepper
Refrigerate and let cool completely.
Add a dollop of yogurt or sour cream on top of serving
Enjoy this easy yummy cold summer soup

Pesto Sauce from Laurie Slama

10-12 fresh basil leaves
2 Tbsp. pine nuts, optional
2 Tbsp. olive oil
1 1/2 tsp. sea salt, optional
1-2 cloves garlic
1 small chunk Parmesan Cheese

Put all ingredients into blender and blend well. Great as a cracker dip or served with hummus. Yummy!
